High praise for Adelaide in The New York Times and other food and drink news

36 Hours in Adelaide, Australia - No longer simply a stop on the way to its celebrated wine region, the city has seen a revival of cafes and an arts scene, among other draws: Adelaide is Australia’s unsung city, a perfectly pretty destination on the southern coast, whose many charms are regularly eclipsed by the more glamorous Sydney and Melbourne. Most tourists who do fly into Adelaide are more often than not merely availing themselves of its airport en route to nearby Kangaroo Island or South Australia’s 18 celebrated wine regions, which have made Adelaide Australia’s wine capital. But these days the city is shining as a destination in its own right, and those who do decide to stay are in for a treat: Adelaide has elegant architecture and colonial beauty to spare, and a revival of independent cafes and bars and a booming arts scene have lately given the city a creative edge. So go ahead and fly through Adelaide on the way to its scenic neighbors — just make sure you spend a few days exploring the city as well.

Lukewarm Drinks, Enthusiastic Reaction - The temperature of a drink is not an issue typically up for discussion at the bar. Cocktails are cold, preferably very cold, except in those special time-honored instances (toddies, Irish coffee, Tom & Jerry) when they’re hot. Whatever the temperature of the room may be, the cocktails are not that. Recently, though, a handful of Manhattan bars have found virtue in the lukewarm. ... What gives? According to the bartenders treading this middle path, cold is not always a friend to cocktails; ice dulls the natural flavors of liquor. It also “mutes their aromatic qualities, which is 90 percent of flavor,” said Sother Teague, the beverage director at Amor y Amargo. At room temperature, those flavors and aromas flourish.

As the heat rises, the wines are a-changing - As a U.N. conference in Paris next week tries to limit climate change, wine makers from France to Australia are already changing their time-honoured methods, or even uprooting whole vineyards, as long-established weather patterns alter and the temperature rises.

[Owner Scott] Lambert is dedicated to preserving tradition and is a staunch supporter of one of Montana’s most curious drinking traditions—the wooden nickel. Long before Fernet coins spun bicoastal digestif nerds into a shot-taking tizzy, bars across Montana adopted a “wooden nickel” system in order to entice patrons to come back for another drink, on the house. “Wooden nickels are good for one free drink! It’s a Montana thing. If someone orders a round for everyone but a person already has a drink in front of them, they get chips instead so their drink doesn’t get watered down. I just keep honoring the tradition. There are over 1,500 wooden nickels out there some place.”

In 'The Nordic Cookbook,' An In-Depth Take On Region's Diverse Cuisine - When the idea to write a Nordic cookbook landed on Magnus Nilsson's desk, he was against it. He says it was offensive that someone would think all of Nordic cuisine could fit, let alone belong, in one book. "The Nordic is a geographical region, not really a cultural region," says the author, who's also head chef at the Michelin-starred Faviken restaurant, 400 miles north of Stockholm. "It's too big, and too varied." (It includes Denmark, Finland, Iceland, Norway and Sweden and several groups of autonomous islands.)


He eventually came around. Over 700 pages long, The Nordic Cookbook could have been a series of Nordic cookbooks, and writing it turned into quite a journey for Nilsson.

Arras Blanc de Blanc wins the national wine prize and other food and drink news


Award-winning Tasmanian sparkling wine makes history - A Tasmanian sparkling wine has made history by being named Champion Wine at the National Wine Show of Australia. It is the first time a sparkling wine has won the overall champion title, taking out the Len Evans Memorial Trophy for Champion Wine of Show. The winning drop, a 2006 House of Arras blanc de blanc, is a 100 per cent chardonnay wine.

US approves genetically modified salmon for food - US regulators have given the go-ahead to genetically modified salmon, making it the first GM animal destined for human consumption.
The Food and Drug Administration said it had given approval on the grounds that "food from the fish is safe to eat".

The transgenic salmon is a type of Atlantic salmon injected with a gene from Pacific Chinook salmon to make it grow faster.

Watch: A master sushi chef makes a roll out of a Big Mac - When people talk about ocean-friendly sushi, they probably don’t mean rolls made from McDonald’s hamburger meat. Even so, the concept has strange appeal, as we see in a new video from master sushi chef Hiroyuki Terada, chef of NoVe Kitchen and Bar in Miami, in which he makes “sushi” out of a Big Mac and fries.
